- Description:
- Icing for making plaques or designs to set on cakes
- Source:
- Wilton's Cake Decorating Manual
Serves/Makes:approximately 3 cups
- Ingredients
- 1 pound confectioners' sugar
- level 2 tbsp (30 ml) Wilton's Color Flow mix
- 3 ounces water
- Preparation
- Combine sugar and Color Flow mix, then add water.
- Beat at low speed with electric mixer for five minutes.
- (Too high a speed will beat air into the icing and the finished work may have bubbles.
- Use at once and keep bowl covered with a damp cloth while working - icing dries quickly.
- Tint with paste coloring as needed.
- Make your pattern.
- Cover with wax paper - set on hard surface.
- Fill decorating cone with #2 tube and outline design, keeping lines as smooth as possible.
- Work all areas with like color at one time.
- If your fill-in work is the same color as the outline - wait a few minutes until icing crusts. If fill in work is of a darker shade or contrasting color - allow outline to dry for at least an hour so that colors will not bleed together.
- Fill as follows:
- Have thinned icing ready (thin with water, a few drops at a time-never beat).
- Test icing - let a spoonful of icing drop back into bowl. If it disappears at the count of ten, icing will be just right.
- Fill decorating cone 1/2 full only.
- Cut a small opening at the tip of the cone.
- Starting at outline, press out the icing gently, letting it flow by itself to touch outline.
- Fill entire area quickly before icing crusts.
- If bubbles appear, prick with pin.
- Drying times vary, but allow at least 48 hours.
- Work
- Comments
- You can do this with Royal Icing as well if you can't find the Wilson Color Flow. You can usually find the Color Flow at cake decorating supply stores as well as books on how to do this. These keep indefinately, if carefully boxed and covered to protect from dust and light.
