Serves/Makes:3oz
- Ingredients
- 3 oz (84 grm) fresh ginger root
- 3/4 cup (175 ml) sugar
- boiling water
- sugar for dusting
- 1 drop yellow food color optional
- Preparation
- Shave/slice ginger 1/16 inch thick.
- Place in 2 cups (475 ml) of boiling water with 1/4 cup (60 ml) of sugar.
- Boil 10 min.
- Strain.
- Place boiled ginger slices in fresh 2 cups (475 ml) of water with 1/4 cup (60 ml) of sugar and food color.
- Boil 10 min.
- Strain.
- This may be repeated 2 more times for a mild product or proceed for regular.
- Place boiled ginger on paper towels to dry.
- Sprinkle heavily with sugar on both sides.
- Allow to air dry for 24 hours to crystallize.

- Same as candied citrus peel recipe.
