Buttermilk Pie

Serves/Makes:One pie

  • 1-1/2 cups (350 ml) sugar
  • 1 stick butter
  • 3 eggs
  • 2 tbsp (30 ml). flour
  • 1/2 cup (125 ml) buttermilk
  • 1 tsp (5 ml) vanilla
  • 1/4 tsp (1 ml). coconut extract
  • Preheat oven to 400 degrees (200 C.) F.
  • Cream sugar and butter; add flour and eggs alternately.
  • Add vanilla and buttermilk and extract, put in pie shell.
  • Set oven at 350 degrees (175 C.) F.
  • Cook about 1 hour or until pie doesn't shake.
