- Ingredients
- 1 chicken (whole or cut up) - make sure it will fit in crock pot (I've also just used a pkg of thighs or breasts)
- 2 carrots, thinly sliced
- 2 medium onions - thinly sliced
- 2 celery stalks, chopped with a few leaves
- 1-1/2 tsp (7 ml) salt
- 1/2 tsp (2 ml) pepper
- 1 (16 oz (448 grm).) can chicken broth
- 1 tsp (5 ml) crushed basil
- 2-1/2 Tbsp (35 ml) Italian seasonings (optional but tastes very good with it)
- Preparation
- Put in 1/2 of the broth, followed by 1/2 the carrots-celery-onion.
- Put in the chicken (if using whole chicken, place the back side down).
- Add remaining broth, veggies, and seasonings.
- Cover and cook on LOW heat for 7-10 hrs, or on HIGH for 2-1/2 to 3-1/2 hrs.
- Remove chicken CAREFULLY as it will practically fall off the bones.
- You can used frozen veggies in lieu of fresh to save time.

- I have added noodles to leftovers to make a thick soup. Good stuff.
