Ingredients
  • 2 lbs (.9 kg) fresh spinach
  • 4 medium sized potatoes
  • 1 egg
  • 1 cup (225 ml) milk
  • 1/2 lb (.2 kg) Cheddar cheese
  • Salt
  • Red Hot Pepper
  • Pinch of nutmeg
  • 2 tbsp (30 ml) butter
Preparation
  • Boil spinach until soft; then drain.
  • Boil potatoes and mash them, adding salt, 1 tbsp (15 ml) butter and 1/2 cup (125 ml) milk.
  • Use remaining butter to grease a straight-sided ovenproof platter.
  • Alternate layers of spinach and mashed potatoes, ending with spinach.
  • Grate the cheese coarsely.
  • Whisk the egg in a cup, add rest of milk, cheese, salt, pepper and nutmeg and mix thoroughly.
  • Pour the mixture onto spinach.
  • Bake in pre-heated oven at 400 deg F until top is crisp, taking care not to burn it.
  • Serve hot.
Comments
Can also be served on toasted wholemeal-bread slices. A trace of thyme can also be added just before serving.
