Serves/Makes:2 loaves plus starter

Ingredients
  • Starter:
  • 2 cups (475 ml) plain flour
  • 2 cups (475 ml) sugar
  • 2 cups (475 ml) milk
  • 2/3 cup (150 ml) oil
  • 1 cup (225 ml) sugar
  • 2 cups (475 ml) plain flour
  • 3 eggs
  • 1-1/2 tsp (7 ml) vanilla
  • 1/2 tsp (2 ml) salt
  • 1 tsp (5 ml) cinnamon
  • 1-1/2 tsp (7 ml) baking powder
  • Optional Ingredients:
  • 1/2 cup (125 ml) raisins or dates
  • 3/4 cup (175 ml) coconut
  • 1/2 cup (125 ml) chopped nuts
  • 1/2 cup (125 ml) applesauce
Preparation
  • Stir your starter on days 1, 2, 3, 4, 6, 7, 8, 9.
  • Day 5: Transfer starter into a larger container and add 1 cup (225 ml) plain flour, 1 cup (225 ml) sugar, 1 cup (225 ml) milk.
  • Day 10: Add as you did on Day 5; put 1 cup (225 ml) in 3 different containers.
  • Give 2 away with this recipe and keep 1 for yourself to make another starter.
  • Add to the remaining batter the oil, 1 cup (225 ml) sugar, 2 cups (475 ml) flour, eggs, vanilla, salt, cinnamon, soda, baking powder and any optional ingredients.
  • Spray 2 loaf pans with PAM and sprinkle with sugar.
  • Bake 40-45 minutes at 350 degrees (175 C.) F.
  • Cool 10 minutes in pans.
