			Ingredients
			   1-1/2 cups (350 ml) butter (half of this can be margerine)
6 eggs plus 1 egg yolk
 2 cups (475 ml) sugar
 6 tsp (30 ml) baking powder
 1 tsp (5 ml), baking soda
juice of 1/2 lemon
 2 tsp (10 ml) vanilla extract
 approximately 2 lbs (.9 kg). all-purpose flour
  Preparation
			  Beat butter and sugar adding eggs one at a time.
Beat until smooth in consistency and sugar has dissolved.
 Mix baking powder and baking soda with 2 cups (475 ml) flour and add.
Add remaining ingredients - not all the flour at once - until you get a soft, elastic dough that doesn't stick to fingers.
Let the dough for 30 min at room temperature.
Take small pieces of dough (size of a nut) to form S-shaped or O-shaped koulourakia.
 Line pan with baking sheet. Preheat oven to 350 degrees (175 C.).
 Beat 1 egg yolk with 1 tsp (5 ml), water and brush over cookies.
Bake at moderate heat until golden brown.

			 This is my grandmother's recipe, handed down to me by my mother. Koulourakia are made in every Greek home at Easter. They smell wonderfully as they are baking.
