- 1-1/2 cups (350 ml) butter (half of this can be margerine)
- 6 eggs plus 1 egg yolk
- 2 cups (475 ml) sugar
- 6 tsp (30 ml) baking powder
- 1 tsp (5 ml), baking soda
- juice of 1/2 lemon
- 2 tsp (10 ml) vanilla extract
- approximately 2 lbs (.9 kg). all-purpose flour
- Beat butter and sugar adding eggs one at a time.
- Beat until smooth in consistency and sugar has dissolved.
- Mix baking powder and baking soda with 2 cups (475 ml) flour and add.
- Add remaining ingredients - not all the flour at once - until you get a soft, elastic dough that doesn't stick to fingers.
- Let the dough for 30 min at room temperature.
- Take small pieces of dough (size of a nut) to form S-shaped or O-shaped koulourakia.
- Line pan with baking sheet. Preheat oven to 350 degrees (175 C.).
- Beat 1 egg yolk with 1 tsp (5 ml), water and brush over cookies.
- Bake at moderate heat until golden brown.
- This is my grandmother's recipe, handed down to me by my mother. Koulourakia are made in every Greek home at Easter. They smell wonderfully as they are baking.
