Serves/Makes:6 slices

Ingredients
  • 3 cups (700 ml) pureed yellow squash
  • 1/2 stick melted butter
  • 1 tsp (5 ml) each of coconut, lemon & vanilla flavoring
  • 2 eggs beaten
  • 1 tbsp (15 ml) flour
  • 1 cup (225 ml) coconut
  • 1 cup (225 ml) sugar
  • deep dish pie crust or
  • 2 regular pie crusts
Preparation
  • Beat flour, sugar, butter and eggs well.
  • Add flavoring, squash and 3/4 cup (175 ml) coconut.
  • Pour in pie shell(s).
  • Sprinkle remaining 1/4 cup (60 ml) coconut on top of pie(s).
  • Bake at 350 degrees (175 C.) for 40 to 50 minutes.

Delicious. Non-squash eaters will never know if you don't tell!
