Fresh Apple Cake

Serves/Makes:2-8" or 9" rnd/sq or 1-9 x 13"

Ingredients
  • Cake:
  • 1-1/2 cups (350 ml) vegetable oil
  • 2 cups (475 ml) sugar
  • 2 eggs
  • 3 cups (700 ml) all-purpose flour
  • 1 tsp (5 ml). salt
  • 1-1/2 tsp (7 ml). baking soda
  • 1 tsp (5 ml). cinnamon
  • 3 cups (700 ml) finely chopped peeled apples
  • 1 cup (225 ml) chopped nuts
  • 2 tsp (10 ml). vanilla flavoring
  • Icing:
  • 1/2 cup (125 ml) real butter
  • 1 8 oz (224 grm). package cream cheese
  • 1 (1 lb) box or bag powdered sugar
  • 1 cup (225 ml) chopped nuts
  • 1 tsp (5 ml). vanilla flavoring
Preparation
  • CAKE:
  • Mix the oil, sugar and eggs in a mixing bowl.
  • In a separate bowl, sift the flour, salt, soda and cinnamon.
  • Gradually add the flour mixture to the oil mixture; mix thorougly.
  • Stir in the apples, nuts and flavoring.
  • Prepare the pan(s) by completely greasing the sides and bottom with a solid vegetable shortening, then lightly dusting the bottom and sides with flour.
  • Pour the cake into the pan(s).
  • Bake at 350 degrees (175 C.) for approximately 60 minutes (check on it at 50 minutes).
  • When you stick a toothpick in the center of the cake and it comes out clean and it comes out clean the cake is done.
  • Cool completely in the pan on a wire rack.
  • Remove from pan and spread with cream cheese icing.
  • Icing:
  • Beat the butter and cream cheese together until light in color.
  • Blend in powdered sugar, vanilla flavoring and nuts.
  • Ice the cake to suit yourself.
Comments
Note: If you're going to eat the cake within a couple of days leaving it out of the refrigerator probably won't hurt, but any longer and it needs to be refrigerated. The second day after baking it is moister because of the apples. It is great!! Enjoy!!

I got this recipe from the Warren County RECC in Bwoling Green, Kentucky. It was given to me when my sister, Gail Lewis and I went by their drive through window to pay her electric bill. Apparently they give out a recipe each month. This was labeled "Recipe of the Month-September 2000".
