Peanut Butter Cake with Cocoa Frosting

Serves/Makes:1 9 x 13 inch cake

Ingredients
  • 1/2 cup (125 ml) peanut butter
  • 1/3 cup (80 ml) butter
  • 1-1/2 cups (350 ml) sugar
  • 2 eggs
  • 1 tsp (5 ml). vanilla flavoring
  • 2 cups (475 ml) all purpose flour
  • 3 tsp (15 ml). baking powder
  • 1 tsp (5 ml). salt
  • 1/2 tsp (2 ml). cinnamon
  • 1 cup (225 ml) milk
  • Cocoa Frosting:
  • 2 cups (475 ml) powdered sugar
  • 1/3 cup (80 ml) cocoa powder
  • 6 tbsp (90 ml) milk (or more)
  • 1 tsp (5 ml). vanilla flavoring
  • 1/2 cup (125 ml) peanut butter
Preparation
  • Cream together peanut butter, butter and sugar in large bowl with electric mixer.
  • Add eggs, one at a time and beat well after each addition.
  • Add the vanilla flavoring.
  • Mix together the flour, baking powder, salt and cinnamon, and add them to the beaten mixture, alternating with the milk, beat well.
  • Spread batter evenly into a greased 13 X 9" cake pan.
  • Bake 45 mins. at 350 degrees (175 C.).
  • Cool and frost with Cocoa Frosting.
  • Cocoa Frosting:
  • Sift sugar and cocoa together in a mixing bowl.
  • Add the peanut butter, vanilla flavoring, and milk.
  • Blend together to desired consistency, (add more powdered sugar or milk, if needed).
  • Spread on cake.
