Serves/Makes:6 or more slices .

Ingredients
  • 4 cups (950 ml) sliced peeled ripe peaches (can use frozen)
  • 1 cup (225 ml) sugar, divided use
  • 2 tbsp (30 ml) quick cooking tapioca
  • 1 tsp (5 ml) lemon juice
  • 1/2 cup (125 ml) all purpose flour
  • 1/2 cup (125 ml) chopped pecans or walnuts
  • 1/4 cup (60 ml) butter or margarine
  • 1 unbaked pastry shell (9 inches)
  • whipped cream or ice cream optional
Preparation
  • In a large bowl, combine peaches, 1/4 cup (60 ml) sugar, tapioca and lemon juice mix well.
  • In a small bowl, combine flour, nuts and remaining sugar, cut in butter until crumbly.
  • Sprinkle a third of the crumbles into pie shell, cover with peaches.
  • Sprinkle remaining crumbs on top.
  • Bake at 450 degrees (225 C.) for 10 minutes, reduce heat to 350 degrees (175 C.) and bake for 30 minutes or until the peaches are tender and topping is golden brown.
  • Serve with whipped cream or ice cream if desired.

I received this from a lady on WWRecipes. She had requested the recipe and I thought it sounded wonderful and emailed her. She was kind enough to forward this recipe to me. It is requested for all family gatherings and there is never any leftovers.
