Apple Cake with Cream Cheese Icing

Description:
A dense and moist cake using fresh apples, cinnamon and nuts, and a rich cream cheese icing. A delicious snack or dessert.

Serves/Makes:8-12 big squares

Ingredients
  • Cake Ingredients:
  • 2 eggs
  • 1 cup (225 ml) corn oil (canola, blends or vegetable oils are fine)
  • 2 cups (475 ml) sugar
  • 2 cups (475 ml) flour
  • 2 tsp (10 ml) ground cinnamon
  • 1 tsp (5 ml) soda
  • 1/2 tsp (2 ml) salt
  • 1 tsp (5 ml) vanilla
  • 4 cups (950 ml) thinly sliced apples
  • 1/2 cup (125 ml) chopped nuts
  • Icing Ingredients:
  • 6 oz (168 grm). cream cheese, cool room temperature
  • 1-1/2 cups (350 ml) powdered sugar
  • 3 tbsp (45 ml) butter, cool room temperature
  • 1 tsp (5 ml) vanilla
  • cold milk as needed
  • chopped nuts, optional
Preparation
  • Beat eggs until foamy.
  • Add the oil and sugar and hand stir.
  • Add the dry sifted ingredients.
  • Fold in the apples and nuts, do not stir hard, you have to keep the little air bubbles in the batter safe!
  • Bake in a 9x13 inch cake pan at 350 degrees (175 C.) for 60 minutes.
  • Cool the cake and ice it.
  • As an optional garnish, you can sprinkle more chopped nuts on top of the icing.
  • Icing Directions:
  • Cream together the cream cheese and the butter, carefully to keep it from warming up too much. It needs to be a cool room temperature.
  • Add the other ingredients and blend well, using cold milk as needed to give you the consistency you life. (We like ours thicker, and a touch of milk goes a LONG way, so be careful).

This is not for the family on a diet. It is very rich and delicious. My kids like this a lot!
