  • I live at 6,500 feet here in Colorado Springs and I make the following adjustments:
  • I use 1/2 the leavening called for, about 3/4 the amount of sugar and add 1 tbsp (15 ml) to 2 tbsp (30 ml) flour for each cup called for in the recipe. Then if a cake recipe calls for a 350 degree (175 C.) oven I bake at 375 degrees (200 C.). Sometimes you need to bake an additional 5 to 15 minutes. Prevent your baked goods from getting too brown on top by placing a tent of foil over them when the product is as brown as you like and then continue to bake until done.
