Simple, delicious, nutritous, inexpensive and the best potluck or picnic item. Can set out for a long time without worry of spoiling.

Serves/Makes:6 servings

Ingredients
  • 4 cups (950 ml) fresh tomatoes diced into 1/2-inch pieces (1-1/2 lbs (.7 kg)., about 5 medium tomatoes)
  • 3/4 cup (175 ml) slivered red onion
  • 1/2 cup (125 ml) water
  • 1/3 cup (80 ml) each olive oil
  • 1/3 cup (80 ml) white wine vinegar
  • 1 tsp (5 ml) ground black pepper
  • 1 tsp (5 ml) salt
  • 1 tsp (5 ml) sugar
  • 1/2 cup (125 ml) shredded fresh basil
  • 6 cups (1425 ml) day-old dense, crusty bread cut or torn into 1-inch cubes (about 1/2 lb (.2 kg).)
  • parmesan cheese, optional
Preparation
  • Combine all ingredients except bread in a large bowl; let stand for flavors to develop, about 10 minutes.
  • Add bread; toss well to coat.
  • If bread seems dry, sprinkle with an additional tbsp or two of water.
  • Salad will hold several hours at room temperature before serving.
Comments
This is a great recipe for family meals or to take to a potluck or picnic. When I serve it at home, we usually have it with a big bowl of "peel and eats".. chilled boiled shrimp, and I add a good shredding of fresh parmesan cheese to this recipe.
