Tradtional old fashioned Blackberry Jam Cake.

Serves/Makes:8 or more

Ingredients
  • 1 cup (225 ml) butter
  • 1-1/2 cups (350 ml) sugar
  • 3 eggs
  • 1-1/2 cups (350 ml) blackberry jam
  • 3 cups (700 ml) flour
  • 1 tsp (5 ml) soda
  • 1/4 tsp (1 ml) salt
  • 1 tsp (5 ml) cloves
  • 1 tsp (5 ml) nutmeg
  • 1 tsp (5 ml) cinnamon
  • 1 cup (225 ml) buttermilk
Preparation
  • Cream butter and sugar, add eggs and blackberry jam. Beat thoroughly.
  • Sift the flour, measure and resift with soda, salt, and spices.
  • Add alternately with buttermilk to the first mixture of sugar and eggs. Beat well.
  • Pour into well greased tube cake pan.
  • Bake at 350 degrees (175 C.) for about 55 minutes.
  • Use a caramel frosting for tradtional icing.
