Shoepeg Corn Casserole

Ingredients
  • 3 cans white shoepeg corn, drained
  • 8 oz (224 grm). cream cheese, softened (reduced fat is OK)
  • 1/4 cup (60 ml) milk
  • 4 oz (112 grm). can chopped green chiles
  • 2 tbsp (30 ml) magarine
  • buttered bread crumbs
  • paprika
  • cooking spray (such as Pam)
Preparation
  • Melt cheese, milk, chiles and margarine in large mixing bowl in microwave, stirring frequently.
  • Add corn and mix well.
  • Put in 2 quarts (1900 ml) casserole which has been sprayed with cooking spray.
  • Top with bread crumbs and paprika.
  • Bake at 350 degrees (175 C.) until bubbly, about 30 minutes.
Comments
This is very creamy, a bit sweet because of the corn, but not spicy even with the green chiles. They give it a unique and deliciously different taste!
