Quick, crunchy cookie!

Serves/Makes:3 dozen or more

  • 3/4 cup (175 ml) packed brown sugar
  • 3/4 cup (175 ml) shortening
  • 1 egg
  • 1 tsp (5 ml) vanilla
  • 3 cups (700 ml) Oatmeal Raisin Crisp cereal
  • 1-3/4 cups (425 ml) all purpose flour
  • 1 tsp (5 ml) baking powder
  • 1/4 tsp (1 ml) salt
  • 1/2 tsp (2 ml) ground cinnamon
  • Heat oven to 400 degrees (200 C.).
  • Mix brown sugar, shortening, egg and vanilla in large bowl.
  • Stir in remaining ingredients.
  • Drop by tsp 2 inches apart onto ungreased cookie sheet.
  • Bake until light brown, 8 to 10 minutes.
