Serves/Makes:4 c. approx.

Ingredients
  • 1 lb (.5 kg). bacon
  • 1 large Bermuda onion
  • 1 large green pepper
  • 5 to 6 good size tomatoes, very ripe works best
  • 1 tbsp (15 ml). sugar, to taste
  • salt and pepper, to taste
Preparation
  • Cut up into small squares and fry (well done) bacon.
  • While the bacon is frying, before well done, chop onion and green pepper and add to bacon.
  • Drain off excess liquid.
  • When bacon is done and onion and green pepper are tender, cut tomatoes up over frying pan into wedges (by cutting the tomatoes over the pan you retain all the juice of the tomatoes).
  • Add salt and pepper to taste (very little salt, may be left out all together since bacon varies in salt content).
  • Add sugar to taste.
  • Cook over low to medium heat, covered, until tomatoes have cooked up.
Comments
Sometimes I'll add a small can of Green Giant Nibblet corn, drained.
