Pumpkin Fruit Cake

  • 1/2 lb (.2 kg) butter
  • 1 cup (225 ml) sugar
  • 2 eggs
  • 1 cup (225 ml) cold mashed pumpkin
  • 2 cups (475 ml) flour
  • 1 tsp (5 ml) cream of tartar
  • 1/2 tsp (2 ml) baking soda
  • 1 lb (.5 kg) dried mixed fruit
  • Cream butter and sugar, add eggs and beat well.
  • Add cold mashed pumpkin, flour sifted with cream of tartar and baking soda.
  • Lastly mix in 1 lb (.5 kg) dried mixed fruit.
  • Turn into greased pan.
  • Bake in slow oven 1 1/2 hrs.
