A wonderful cake, full of flavor, and you'd never know a Pinto Bean was in it!

Serves/Makes:12 large, 24 small squares

Ingredients
  • Cake:
  • 1/2 cup (125 ml) margarine
  • 2 cups (475 ml) sugar
  • 2 eggs
  • 2 cups (475 ml) refried beans or pinto beans
  • 1/2 cup (125 ml) chopped nuts (toasted pecans are wonderful)
  • 1-1/4 cups (300 ml) flour
  • 1/2 tsp (2 ml) baking powder
  • 1 tsp (5 ml) cinnamon
  • 1 tsp (5 ml) baking soda
  • 1/2 tsp (2 ml) ground cloves
  • 1/2 tsp (2 ml) ground allspice
  • Glaze:
  • 1 cup (225 ml) brown sugar
  • 1/4 cup (60 ml) milk
  • 1/2 cup (125 ml) butter or margarine
  • 1 tsp (5 ml) vanilla
Preparation
  • Cake:
  • Cream margarine, eggs and sugar.
  • Put fully cooked pinto beans through a blender or food processor until they are soft and smooth and no lumps.
  • Add the beans to creamed mixture alternately with the sifted dry ingredients.
  • Add nuts.
  • Bake in greased and floured 9x13-inch pan 1 hour or until done.
  • Glaze immediately, or no longer than still warm to the touch, and pour over the glaze.
  • Glaze:
  • Mix sugar, milk and butter butter in a heavy saucepan.
  • Boil 5 minutes, stir in vanilla.
  • Pour over hot cake.
  • Hint: I often times add mini-chocolate chips to this cake's batter before it goes into the oven, and we love the chocolate added in!!
