Serves/Makes:12 large, 24 small squares
- Ingredients
- Cake:
- 1/2 cup (125 ml) margarine
- 2 cups (475 ml) sugar
- 2 eggs
- 2 cups (475 ml) refried beans or pinto beans
- 1/2 cup (125 ml) chopped nuts (toasted pecans are wonderful)
- 1-1/4 cups (300 ml) flour
- 1/2 tsp (2 ml) baking powder
- 1 tsp (5 ml) cinnamon
- 1 tsp (5 ml) baking soda
- 1/2 tsp (2 ml) ground cloves
- 1/2 tsp (2 ml) ground allspice
- Glaze:
- 1 cup (225 ml) brown sugar
- 1/4 cup (60 ml) milk
- 1/2 cup (125 ml) butter or margarine
- 1 tsp (5 ml) vanilla
- Preparation
- Cake:
- Cream margarine, eggs and sugar.
- Put fully cooked pinto beans through a blender or food processor until they are soft and smooth and no lumps.
- Add the beans to creamed mixture alternately with the sifted dry ingredients.
- Add nuts.
- Bake in greased and floured 9x13-inch pan 1 hour or until done.
- Glaze immediately, or no longer than still warm to the touch, and pour over the glaze.
- Glaze:
- Mix sugar, milk and butter butter in a heavy saucepan.
- Boil 5 minutes, stir in vanilla.
- Pour over hot cake.
- Hint: I often times add mini-chocolate chips to this cake's batter before it goes into the oven, and we love the chocolate added in!!
