Serves/Makes:1 1/2 quart casserole

Ingredients
  • 2 lbs (.9 kg). or more beef stew meat
  • 1 can cream of mushroom soup
  • 1 small can of sliced mushrooms
  • 1/2 pkg. dried onion soup mix
  • 1/2 cup (125 ml) red wine
  • salt and pepper to taste
  • Serving suggestion:
  • cooked noodles or rice
Preparation
  • Preheat oven to 325 degrees (175 C.).
  • Grease, or spray with a non stick spray like Pam, a 1-1/2 quarts (1425 ml) casserole dish.
  • Mix all the ingredients together and pour into the prepared casserole dish.
  • Then take aluminum foil and cover the dish completely ALL around it, sides, top, all around it, making a full enclosure.
  • Bake in a 325 degree (175 C.) oven for 3 hours.
  • DO NOT PEEK the whole 3 hours.
  • Serve over noodles or rice
Comments
Freda was a dear friend and client of mine in the Real Estate Business. Tough as nails on the outside, but really had a good heart underneath that outward appearance. This was one of her recipes that she shared with me. It is really good, and so so easy to make. Note: I bet you could cook this in a Dutch Oven with a tight fitting lid, might try it and see.
