Serves/Makes:1 9 X 13 CAKE
- Ingredients
- Cake:
- 1-1/2 cups (350 ml) sugar
- 2 cups (475 ml) all purpose flour
- 1 tsp (5 ml) salt
- 2 tsp (10 ml) baking soda
- 2 large eggs, beaten
- 1 15.4 oz (431.2 grm). can fruit cocktail in syrup, undrained
- 1/4 cup (60 ml) vegetable oil
- 1 tsp (5 ml) vanilla extract
- Topping:
- 1/2 cup (125 ml) shredded, sweetened coconut
- 1/4 cup (60 ml) brown sugar
- Icing:
- 1/2 cup (125 ml) brown sugar
- 1/2 cup (125 ml) regular sugar
- 1 cup (225 ml) evaporated milk
- 1/2 cup (125 ml) (1 stick) butter
- dash of salt
- 1 tsp (5 ml) vanilla extract
- 1/2 cup (125 ml) shredded coconut
- 1 cup (225 ml) chopped pecans or walnut
- Preparation
- Preheat oven to 350 degrees (175 C.).
- Grease a 9 x 13 cake pan ( I use butter to grease it)
- Note: If using glass or dark coated pan, reduce heat to 325 degrees
- Cake:
- Sift together the sugar, salt, flour & baking soda.
- Add to the flour mixture the beaten eggs, the undrained fruit cocktail, oil & vanilla extract and mix well.
- Pour this into the prepared 9 x 13 cake pan.
- Sprinkle the topping on it, then bake for approx. 25 to 30 minutes or until toothpick or cake tester inserted into the center comes out clean.
- When done take out of the oven an put on cooling rack and pour the prepared icing over the cake, while it is still hot and spread over it evenly.
- Cool and Serve right out of the cake pan.
- Topping:
- Mix together the coconut & brown sugar and sprinkle on top of the cake just before going into the oven.
- Icing:
- Put the sugars, evaporated milk, butter and dash of salt into a pan and put on the stove at medium to medium high temperature and bring to a rolling boil and boil for 2 minutes (stir down as needed to keep from boiling over).
- Take off heat and add the coconut, nuts and the vanilla extract and mix.
- Pour and spread over the hot cake.
- Comments
- This was one of the Old Fashioned Recipes that my Mama would make and of course I had to tweak it to suit me. I added the oil to the cake mix because I thought it was a little too dry and of course anything with oil in it is better.
This a really a good an simple cake and you will get lots of compliments on it.
