Coconut Cream Pie

  • 4 egg yolks
  • 1/2 cup (125 ml) sugar
  • 2 cups (475 ml) milk
  • 4 tbsp (60 ml) cornstarch
  • 1/4 cup (60 ml) grated fresh coconut
  • pinch of salt
  • vanilla to flavor
  • 1 tbsp (15 ml) butter
  • 4 egg whites for meringue
  • baked pie shell
  • Combine milk, sugar, and salt in sauce pan.
  • Let come to a near boil.
  • Stir in cornstarch and egg yolks and let cook for a few minutes.
  • Add grated coconut and vanilla. Cool.
  • Fill Pie Shell which has been previously baked.
  • Top with meringue and brown in oven.
