Chili Cheese Dip

  • 2 Tbsp (30 ml). butter
  • 2 eggs
  • 2 1 lbs (.5 kg). cans chili with beans
  • 1 large can hominy, drained
  • 1 1 lb (.5 kg). package Velveeta Mexican cheese (mild), cubed.
  • In skillet, scramble eggs in butter.
  • Add chili and drained hominy.
  • Simmer about 20 minutes.
  • Add cheese a little at a time and stir until melted.
  • Serve warm with Fritos or Tortilla Chips.
