Ingredients
  • 4 boneless, skinless chicken breast
  • Large sized jar of salsa (as hot as you like)
  • 4 slices of Monterey Jack cheese
  • salt (optional)
  • pepper (optional)
Preparation
  • Spray large skillet with vegetable cooking spray.
  • Brown chicken until almost fully done.
  • Lower heat to simmer.
  • Pour all of salsa over chicken.
  • Add salt and pepper if desired.
  • Cover and let simmer 10-15 minutes.
  • Place cheese slices on chicken (one per chicken)
  • Cover again until cheese melts.
  • Remove from heat and serve.
Comments
This recipe was an experiment gone very right. I would recommend using a Spanish/Mexican theme when choosing side dishes. Some suggestions are Spanish/Mexican rice, refried beans, tortillas/tortilla chips, etc.
