Green Tomato Relish - Chow Chow

Serves/Makes:8 to 10 pints

  • 1 peck green tomatoes
  • 1 med. cabbage
  • 6 onions
  • 5 bell peppers {3 red for color}
  • 8 cups (1900 ml) sugar
  • 3 Qts. vinegar
  • 2 Tbsp (30 ml). celery seed
  • 2 Tbsp (30 ml). mustard seed
  • 1 stick cinnamon bark
  • 1 Tbsp (15 ml). whole cloves
  • Grind all veggies coarsely and combine in large bowl.
  • Sprinkle with one cup salt and let set overnight.
  • Drain.
  • Tie cinnamon and cloves in a spice bag (tie up in a double layer of cheesecloth).
  • Combine everything and cook till fairly soft {don't overdo it}
  • Pack hot into jars and seal in hot water bath for about 15 min.
