Ingredients
  • 6 boneless, skinless chicken breasts
  • 3 Tbsp (45 ml) margarine
  • 3/4 cup (175 ml) soy sauce
  • 5 Tbsp (70 ml) honey
  • 3 Tbsp (45 ml) ginger powder
  • 1/2 tsp (2 ml). black pepper
Preparation
  • Wash chicken breasts and pat dry.
  • Place in casserole or other baking dish (line the baking dish with aluminum foil for easy washing after meal!)
  • Smear chicken with margarine. Splash on soy sauce. Drizzle honey evenly over chicken.
  • Dust with ginger powder and black pepper.
  • Cover chicken with lid, or with aluminum foil if no lid is available. This is important and helps keep the chicken moist.
  • Bake at 400 degrees (200 C.) for one hour.
  • Serve immediately.

I made this recipe up about a year ago to feed a picky husband. I serve it with rice or cooked potatoes and carrots.
