Southern Sweet Potato Bread

Serves/Makes:1 loaf

  • 1/4 cup (60 ml) butter or margarine, softened
  • 1/2 cup (125 ml) packed brown sugar
  • 2 eggs, lightly beaten
  • 1 cup (225 ml) mashed sweet potatoes
  • 3 Tbsp (45 ml) milk
  • 1 tsp (5 ml) grated orange peel
  • 2 cups (475 ml) self-rising flour
  • 1/4 tsp (1 ml) ground allspice
  • 1/4 tsp (1 ml) ground nutmeg
  • 1/4 cup (60 ml) chopped pecans
  • Orange Cream Spread:
  • 3 oz (84 grm). package cream cheese, softened
  • 1 tsp (5 ml) orange juice
  • 1 tsp (5 ml) grated orange peel
  • In a mixing bowl, cream butter and sugar.
  • Add eggs, and mix well.
  • Add sweet potato, milk and orange peel, and mix well.
  • In another bowl, combine flour, allspice, and nutmeg. Add to cream mixture.
  • Mix just until combined. Fold in nuts.
  • Pour into a greased 9 inch by 5 inch loaf pan. Bake at 350 degrees (175 C.) for 40 to 45 minutes.
  • Cool in pan for 10 minutes.
  • Combine spread ingredients and beat until smooth.
  • Serve spread in a bowl to spread on individual slices.
  • ENJOY!!!
