- Ingredients
- 1 chicken (3 pound)
- 2 tbsp (30 ml) olive oil
- 2 cups (475 ml) dry white wine
- 3 garlic cloves
- 4 tomatoes, peeled and chopped
- 2 tbsp (30 ml) black olives, pitted
- 2 tbsp (30 ml) finely chopped basil leaves
- salt and pepper
- Preparation
- Cut the chicken into 10 pieces.
- Heat the oil in a large saucepan.
- Brown the chicken well on all sides.
- Add the wine, garlic, tomatoes, olives and half the basil.
- Salt and pepper to taste.
- Cover and simmer for 20 minutes or until tender.
- Sprinkle the remainder of the basil over the chicken and serve.

- I have tried this version with white wine and it was excellent.
