Serves/Makes:2 loaves

Ingredients
  • 2 lbs (.9 kg). ground beef
  • 4 slices bread, crumbled
  • 2 cups (475 ml) baked beans
  • 2 eggs OR egg substitute
  • 1 cup (225 ml) barbecue sauce
  • 1/4 cup (60 ml) mustard
  • 1/4 cup (60 ml) ketchup
  • 2 cups (475 ml) potatoes (cooked and mashed)
  • 1 cup (225 ml) cheese, cubed or shredded
Preparation
  • Mash up the baked beans.
  • Mix everything together except the potatoes and cheese.
  • Add more liquid or bread as needed to reach desired consistency.
  • Press mixture into the bottom and around the sides of two 9 inch x 5 inch loaf pans.
  • Leave a large trough in the center of each loaf.
  • Reserve about 1-1/2 cups (350 ml) of meat mixture to cover the top of each loaf.
  • Fill trough of each meatloaf with mashed potatoes.
  • Cut cheese into cubes, or grate, and put this on top of the potatoes.
  • Cover potatoes and cheese with reserved meat mixture.
  • Bake in preheated 350 degree (175 C.) oven for 1 hour.

Fran McGee reports: This is another one of those recipes I made up by combining 3 or 4 other recipes, or parts of them. And of course a couple of things added just off the top of my head. It is YUMMY!
