Serves/Makes:1 9x13 inch Cake

  • 1 cup (225 ml) soft margarine
  • 2 cups (475 ml) all-purpose flour
  • 1-3/4 cups (425 ml) sugar
  • 3 Tbs (45 ml). cocoa
  • 1 tsp (5 ml). soda
  • 1 tsp (5 ml). vanilla
  • 2 eggs
  • 1/2 cup (125 ml) buttermilk
  • 1 cup (225 ml) Coca-Cola
  • 1-1/2 cups (350 ml) miniature marshmallows
  • Cola Icing:
  • 1/2 cup (125 ml) soft margarine
  • 3 Tbs (45 ml). cocoa
  • 1/3 cup (80 ml) Coca-Cola
  • 4 cups (950 ml) sifted powdered sugar
  • 1 cup (225 ml) toasted chopped pecans
  • Cake:
  • Combine all ingredients except cola and marshmallows in a large bowl.
  • Blend at low speed of mixer.
  • Beat at medium speed 1 minute.
  • Add cola and blend; stir in marshmallows.
  • Pour into greased 9 inch X 13 inch pan.
  • Bake at 350 degrees (175 C.) for 30 minutes or until cake tests done.
  • Cola Icing:
  • Combine all ingredients except pecans in small mixer bowl.
  • Beat until smooth.
  • Stir in pecans.
  • Spread on cake.
I found this recipe in an old cookbook I've had since the 60's.
