A chocolate cake with cream cheese frosting

Serves/Makes:1 layer cake

Ingredients
  • 1/2 cup (125 ml) butter
  • 1-1/2 cups (350 ml) sugar
  • 2 eggs
  • 4 tbsp (60 ml) red food coloring
  • 2 tbsp (30 ml) cocoa
  • 1 cup (225 ml) buttermilk
  • 1 tsp (5 ml) salt
  • 2-1/2 cups (600 ml) sifted flour
  • 1 tbsp (15 ml) vinegar
  • 1 tsp (5 ml) baking soda
  • Cream Cheese Frosting:
  • 1/2 cup (125 ml) butter
  • 1 (8 ounce) package cream cheese
  • 4 cups (950 ml) confectioners sugar
  • 1 tsp (5 ml) vanilla extract
Preparation
  • Preheat oven to 350 degrees (175 C.).
  • Cream 1/2 cup (125 ml) butter, sugar, and eggs.
  • Beat in food coloring and cocoa.
  • Mix in buttermilk, salt, vanilla, baking soda and vinegar.
  • Slowly add flour to mixture.
  • Put batter into two greased 9 inch round pans.
  • Bake for 25-30 minutes.
  • Allow to cool completely, then frost with Cream Cheese Frosting.
  • To make Cream Cheese Frosting:
  • Combine 1/2 cup (125 ml) butter, cream cheese, confectioners' sugar and vanilla.
  • Mix until well blended.
