Sissy's Sister Gail's Sweet Potato Casserole

Ingredients
  • 3 cups (700 ml) mashed cooked sweet potatoes (or canned)
  • 1 cup (225 ml) milk
  • 2 eggs
  • 1-1/4 cups (300 ml) sugar (2/3 cup (150 ml) of this to be brown sugar pressed in cup, the rest to be white sugar to complete the 1-1/4 cups (300 ml) total)
  • 3/4 stick of real butter
  • 1/2 tsp (2 ml) ground nutmeg
  • 1/2 tsp (2 ml) ground cinnamon
  • 1/2 tsp (2 ml) vanilla flavoring
  • Topping:
  • 3/4 stick of real butter
  • 3/4 cup (175 ml) cornflake crumbs
  • 1/2 cup (125 ml) chopped pecans
  • 1/2 cup (125 ml) packed down, brown sugar
Preparation
  • Preheat oven to 400 degrees (200 C.).
  • Grease a 1 1/2 qt. casserole dish with butter.
  • Mix all the ingredients and pour into casserole.
  • Bake for 30-40 minutes, until mixture is firm.
  • While baking, melt butter for topping and mix in remaining topping ingredients.
  • Add topping to casserole and continue to bake for additional15 mins. or until brown.
Comments
This is almost like a dessert. My sister Gail Lewis from Bowling Green Kentucky makes this, and gave me the recipe, and it is GREAT!! Enjoy!!
