Serves/Makes:one 9-inch pie

Ingredients
  • 2 eggs, slightly beaten
  • 1 cup (225 ml) sugar
  • 1/2 cup (125 ml) all-purpose flour or 1/4 cup (60 ml) cornstarch
  • 1/2 cup (125 ml) butter, melted and cooled
  • 1 cup (225 ml) chopped pecans
  • 1 (6-oz.) semisweet chocolate chips
  • 4 tsp (20 ml). bourbon or 1 tsp (5 ml). vanilla extract
  • 1 unbaked 9-inch pastry shell
  • Topping:
  • 1 cup (225 ml) dairy whipped topping
  • 1 tbsp (15 ml) bourbon
Preparation
  • Combine first 4 ingredients in medium mixing bowl; beat with an electric mixer just until blended. Stir in chopped pecans, chocolate chips, and bourbon or vanilla extract. Pour filling into pastry shell, and bake at 350-degrees for 45 to 50 minutes.
  • Cool 1 hour.
  • Serve warm with flavored dairy topping.
  • Topping:
  • Mix 1 cup (225 ml) dairy topping with 1 tbsp (15 ml) bourbon, or to taste, until well blended.
  • Chill until ready to use.
  • Or add 1 tbsp (15 ml) of bourbon to lightly sweetened whipped cream.
