Serves/Makes:2 cups

  • 3 egg yolks
  • 3 T HOT water
  • 1 T lemon juice
  • 1 pinch of salt
  • 1 dash of tabasco sauce
  • tabasco sauce, optional
  • approx. 1/4 cup (60 ml) melted butter
  • Cook over medium heat; whisk constantly and briskly until thick.
  • Remove from heat.
  • While you are still whisking, stir in melted butter, until desired consistancy.
Make sure you use REAL butter for a perfect sauce.I use this in the restauraunt I work at every day and it's great.
