Salsa to go with Mexican food.

Serves/Makes:4 cups

  • 1 can regular Rotel Tomatoes
  • 1 can Mexican-Style Rotel Tomatoes
  • 1 can Extra Hot Rotel Tomatoes
  • 1 large onion, diced
  • 1 bunch cilantro, coarsly chopped
  • Juice of one lime
  • 1 tsp (5 ml) salt
  • 1/4 cup (60 ml) beer
  • Pour cans of Rotel into large bowl.
  • Add all other ingredients.
  • Stir.
  • Cover and let it sit an hour before serving.
