Serves/Makes:2 cups

Ingredients
  • 1 cup (225 ml) flour
  • 1/2 bottle beer
  • pepper, to taste
  • garlic salt, to taste
Preparation
  • Place all ingredients in a bowl and mix well.
  • Dredge the fish, chicken, shrimp, or even onion rings in the batter and drop in hot oil to fry.
Comments
It may take a little more or less beer or flour but the batter should be thick enough to coat a spoon well when dipped in. Beer works better when it has lost most of the fizz. This works well with lots of different meats and seafood and gives it a fluffy batter that is crunchy on the outside but remains moist inside.
