Serves/Makes:3/4 cup

  • 1/4 cup (60 ml) cinnamon chips
  • 2 tbsp (30 ml). star anise
  • 1 tbsp (15 ml). each fennel seeds, dried orange peel, whole cloves and powdered ginger
  • Grind all together until a powder.
  • Store air-tight
  • To make cinnamon chips, crush stick cinnamon with a hammer
  • Use 1-1/2 tsp (7 ml). to 1 tbsp (15 ml). per pie.
This one is a little more work.
