  • 3/4 cup (175 ml) sugar
  • 2 tbsp (30 ml) cornstarch
  • 1/4 tsp (1 ml) salt
  • 2 cups (475 ml) milk
  • 2 slightly beaten egg yolks or 1 well-beaten egg
  • 2 tbsp (30 ml) butter
  • 1 tsp (5 ml) vanilla
  • In saucepan, blend sugar, cornstarch and salt.
  • Add milk.
  • Cook and stir over medium heat until thick and bubbly.
  • Remove from heat.
  • Stir a small amount into egg.
  • Stirring, slowly add egg mixture to pan.
  • Cook and stir 2 more minutes.
  • Remove from heat.
  • Add butter and vanilla.
Variations: Chocolate: Increase sugar to 1 c. Add 2 squares bitter baking chocolate along with milk.

Butterscotch: Substitute brown sugar for white. Increase butter to 3 T.
