Egg salad with no celery.

Serves/Makes:4 servings

  • 6 hard boiled eggs (finely grated)
  • 1/3 cup (80 ml) mayonnaise
  • 1/4 cup (60 ml) pimiento stuffed olives (minced)
  • 2 tbsp (30 ml) green onions (minced)
  • 2 tbsp (30 ml) parsley (minced)
  • 1 tbsp (15 ml) Dijon mustard
  • salt
  • black pepper
  • Thoroughly mix together all the above ingredients.
  • Cover and refrigerate for an hour.
  • Spread over your favourite sandwich bread.
