Serves/Makes:6 servings

  • 2 lbs (.9 kg). pork loin, cubed
  • 1 package of taco seasoning
  • 2 tbsp (30 ml) parsley flakes
  • 2 tbsp (30 ml) olive oil
  • 1 large jar picante or salsa
  • 1 cup (225 ml) peach preserves
  • cooked rice
  • Mix cubed pork, taco seasoning and parsley flakes.
  • In skillet with olive oil, add seasoned pork cubes and cook about 4 minutes on medium heat.
  • When pork is cooked add picante and peach preserves.
  • Serve over rice.
Wonderful and easy.
