The Fanny Farmer Cookbook

Serves/Makes:4 servings

  • 3 cups (700 ml) mashed potatoes
  • 1/2 cup (125 ml) heavy cream
  • 1/2 cup (125 ml) Swiss Cheese, grated
  • salt and pepper, to taste
  • Preheat the oven to 350 degrees (175 C.).
  • Butter a shallow 1-1/2 quarts (1425 ml) baking dish.
  • Spread the mashed potatoes in the dish.
  • Whip the cream until stiff, fold in the cheese, and add salt and pepper to taste.
  • Spread over the potatoes.
  • Bake for 25 to 30 minutes or until the top is delicately brown.
