Serves/Makes:5 or more
- Ingredients
- 5 or more medium-sized beets
- 2 sour apples
- 1 tsp (5 ml). bacon fat
- 2 tbsp (30 ml) to 3 tbsp (45 ml). sour cream
- 1-1/2 tbsp (20 ml). flour
- salt and pepper to taste
- lemon juice to taste
- sugar to taste
- Preparation
- Peel beets and apples and grate coarsely, reserving all the juices.
- Melt bacon fat.
- Add grated beets and apples and their juices.
- Season with salt and pepper, and add lemon juice and sugar to taste.
- Simmer, covered, for 30 minutes.
- Remove cover and reduce liquid.
- Combine flour with sour cream then add and let bubble up.
- Simmer a few more minutes.

- I hope this is what you were looking for. It's the only thing I could think of that uses shredded beets.
