Serves/Makes:about 16 biscuits

  • 1 cup (225 ml) mashed sweet potatoes
  • 1 tbsp (15 ml) butter
  • 1 tbsp (15 ml) sugar
  • 1 cup (225 ml) all purpose flour
  • 2 tsp (10 ml). baking powder
  • 1 tsp (5 ml). salt
  • milk
  • Mix potatoes and butter together.
  • Sift flour, sugar, salt and baking powder.
  • Mix with potatoes and butter.
  • If too stiff to handle, add a little milk.
  • Mold into biscuits, using flour to keep dough from sticking to hands.
  • Bake 20 minutes in a 350 degree (175 C.) oven.
