  • 1 cup (225 ml) sugar
  • 3 tbsp (45 ml) flour
  • 1/4 tsp (1 ml) salt
  • 2 eggs
  • 2 cups (475 ml) milk
  • 2 tbsp (30 ml) butter
  • 1 tsp (5 ml) vanilla
  • In large glass mixing bowl, whisk together sugar, flour, and salt.
  • Add 1 egg and 1/4 cup (60 ml) milk.
  • Whisk well.
  • Add second egg and rest of milk, 1/2 cup (125 ml) at a time.
  • Whisk well.
  • Microwave on high approximately 8 to 10 minutes, whisking every two minutes.
  • Remove from microwave when it thickens.
  • Whisk in butter and vanilla.
This is a great pudding for trifles, pies, banana pudding or just to eat with a plain cookie. To make it richer replace the milk with half and half.
