Banana Cake with Cream Cheese Frosting

Ingredients
  • 2-1/4 cups (525 ml) flour
  • 3/4 tsp (4 ml) baking soda
  • 1/2 tsp (2 ml) baking powder
  • 1/2 tsp (2 ml) salt
  • 2 large mashed ripe bananas
  • 1/4 cup (60 ml) buttermilk
  • 1 tsp (5 ml) vanilla extract
  • 1-1/2 sticks unsalted butter, room temperature
  • 1-1/3 cups (325 ml) sugar
  • 2 large eggs
  • For frosting:
  • 1 8 oz (224 grm). package cream cheese, room temperature
  • 1 cup (225 ml) powdered sugar
  • 1 stick butter, room temperature
  • 1 tsp (5 ml) vanilla extract
Preparation
  • Preheat oven to 350 degrees (175 C.).
  • Butter 2 loaf pans or one 9X11X2 inch pan.
  • Mix flour, baking soda, baking powder salt in a bowl.
  • Mix mashed bananas, buttermilk and 1 tsp (5 ml) vanilla in another bowl.
  • Add butter, sugar and vanilla to banana mixture, beat until blended, then mix in the dry ingredients.
  • Bake cakes 25 to 35 minutes until toothpick comes out mostly clean.
  • Frosting:
  • Beat cream cheese and butter in large bowl until fluffy.
  • Add vanilla.
  • Gradually mix in powdered sugar.
  • Frost tops of cakes or unmold loaves and frost after cool.
