Serves/Makes:1 pie

  • 3 cups (700 ml) gooseberries (fresh or frozen)
  • 1 egg
  • 1 cup (225 ml) sugar
  • 5 saltine crackers, crushed
  • 5 tbsp (70 ml) margarine, melted
  • 1/8 tsp (1 ml) salt
  • 1 unbaked 9 inch pie crust
  • crust for lattice top
  • sugar
  • Combine gooseberries, egg, sugar, crackers, margarine and salt.
  • Spoon into prepared pie crust.
  • Top with lattice top and sprinkle with sugar.
  • Bake at 400 degrees (200 C.) for 45 minutes.
