Serves/Makes:1 salad

  • 1/4 cup (60 ml) white wine vinegar
  • 1 tbsp (15 ml) chopped tarragon
  • 1 tbsp (15 ml) chopped parsley
  • 2 tbsp (30 ml) chopped chives
  • 1/4 cup (60 ml) olive oil
  • 1/4 cup (60 ml) whipping cream
  • salt and pepper
  • Whisk vinegar, tarragon, parsley, and chives.
  • Slowly add oil, and cream.
  • Dressing should emulsify to a light cream base.
  • Season to taste.
