Serves/Makes:1 salad each

Ingredients
  • Herbal:
  • 1/4 cup (60 ml) white wine vinegar
  • 1 tbsp (15 ml) chopped tarragon
  • 1 tbsp (15 ml) chopped parsley
  • 2 tbsp (30 ml) chopped chives
  • 1/4 cup (60 ml) olive oil
  • 1/4 cup (60 ml) whipping cream
  • salt and pepper
  • Assertive:
  • 1 tbsp (15 ml) chopped shallots
  • 1 tbsp (15 ml) chopped red onion
  • 1 tsp (5 ml) chopped garlic
  • 1 tbsp (15 ml) grainy mustard
  • 1/4 cup (60 ml) red wine vinegar
  • 1/2 cup (125 ml) olive oil
  • salt and pepper
  • 2 tbsp (30 ml) chopped parsley
Preparation
  • Herbal:
  • Whisk vinegar, tarragon, parsley, and chives.
  • Slowly add oil, and cream.
  • Dressing should emulsify to a light cream base.
  • Season to taste.
  • * always mix cream in at last minute.
  • * use mixed lettuce.
  • Assertive:
  • Combine shallots, red onion, garlic, and mustard.
  • Whisk in red vinegar and oil.
  • Season to taste and stir in parsley.
  • Toss with salad.
  • *use strong flavoured lettuce such as escarole or watercress.
Comments
Serve herbal salad with Californian Fume Blanc and the Assertive with Australian Chardonnay.
