Creamy Avocado Dressing

  • 1 avocado
  • 3 tbsp (45 ml) lime juice
  • 3 tbsp (45 ml) cider vinegar
  • 1/4 cup (60 ml) chopped cilantro
  • 1 clove garlic, chopped
  • 1-1/3 cups (325 ml) olive oil
  • 1 egg yolk
  • 1/3 cup (80 ml) cream
  • 1 tsp (5 ml) salt
  • Combine avocado, lime juice, vinegar, garlic and oil in a blender and process until smooth.
  • In a mixing bowl, whisk egg yolk briefly, then slowly whisk in the avocado mixture.
  • Stir in cream and season with salt
